Nothing makes cold evening more bearable than good, old, hearty Chilli Con Carne. You can still eat this spicy classic while watching your weight 🙌🏻💪🏻. This is how this classic dish is made…

  • 2 onions
  • 4 cloves garlic
  • 2 red peppers
  • 1 tsp chilli powder
  • 1 tsp ground cumin
  • 1 tsp ground cinnamon
  • 1 tsp paprika
  • 400 g red kidney beans
  • 800g (2 tins) of chopped tomatoes
  • 500 g quality minced beef
  • 2 tablespoons balsamic vinegar
  • 200g coconut cream, handful of fresh coriander, cucumber, spring onions and avocado to garnish

Fry chopped vegetables over medium heat with all the spices

Add mince beef breaking any larger chunks.

Add chopped tomatoes with 200ml water and bring to boil and reduce the heat.

Add chopped coriander, balsamic vinegar and salt and pepper to taste. Cover with a lid slightly and cook for another 30mins

Also when cooking a mince dish like this one, it makes sense to double up and freeze a second meal for another day
